It says they get extensive and intensive training so maybe they become man-scent experts too

Their "training" is mostly reading the stuff Cove gets handed from their fragrance (and shoe) suppliers. The majority of those fragrances don't smell "manly" to begin with and are instead rather invasive.

Though all MTM companies sell their product as Maßanzug, custom made or bespoke, it's just altered RTW. So if the basic model is boxy it's almost impossible to get a clean, fitted look.

AFAIK, Cove & Co do organize the occasional events in their shops, along with appearances of famous bespoke expert Bernhard Roetzel and other authors of iGent literature.
I've met him in his shop in the centre of Düsseldorf and it was very hard to keep up the attention level.

The tailor in the video is responsible for the technical training of their staff but he doesn't have time to make any garments. Especially not by using an old treadle machine in their headquarters.
They do offer full bespoke in their Cologne (Köln) shop, but I have no idea how that looks any different to their MTM, which is by far the main source of income (along with their expensive RTW shoes).
They do in-house alterations, but are very reluctant to do big ones or a remake. Which is not unique to Cove & Co, Dolzer and Kuhn (their main competitors) are not much different.
