Cooking Tips, Tricks, Recipes, & Advice

This is a bit off-topic but, in my experience (which isn't actually that much), most intelligent women want two things:
- a good, interesting, caring personality; and
- stability - or, at least, a life plan of sorts.
Never had the impression Fwiffo Fwiffo was interested in intelligent women.

And I don't know why Rambo wants to see this but this was the minestra maritata - Italian 'wedding' soup. For the meat part of the wedding: pork rind, pork hock, Italian sausage, pork ribs. For the veg part of the wedding: raddichio, Belgian endive, escarole, Swiss chard, kale, carrot, celery, onion. Sprinkled with some parmigiano.

Wow this is some seriously impressive work fwiffers

There were a few from the cookbook that didn't photograph well and I have a crap mobile phone so I need natural light. But yes, lately I have been slanting towards cookbook, Italian and Persian stuff. Once summer hits and the glass box I live in becomes a furnace I'll have to change but I'll also get better fresh veg for salads.

Insurance was my first job out of uni and it's a service to society that pays the bills albeit lately it is paying less of them. I have no formal training. I cut slow, prep slow, and probably don't put out sustainable dishes from a cost to revenue standpoint.

So in other words, you're doing it because it seemed like a reasonable thing to do several years ago. Got it.

Cooking is kind of innate, with effort and skill of course, but if you don't have it to begin with, it's like someone with no sport IQ or hand-to-eye coordination playing tennis or football.

Fwiffo Fwiffo where do you get your Persian recipies from?

Mostly Persian Mama...Her site is falling apart but I scroll through and find something I have the ingredients for. My Persian friend says she puts an Azeri spin to some of the recipes. But I also compare with Unicorns in Kitchen and My Persian Kitchen.

I sometimes check out videos on YouTube in Farsi but Persian cooking is a bit like Italian cooking in that everyone's portions, herbs (or lack of herb) are a bit different and everyone has their own family recipe. Certainly not being able to read any Farsi and only bits and pieces of Finglish doesn't help.
 
I spent 4 hours making a pig trotter vegetable broth that was then simmered down to a sticky glaze for another 45 minutes. Then I caramelised vegetables for a good 2 hours in parallel. It would have went faster if I had a second oven and five pans.

Now after cooling and mixing the glaze, trotters and vegetables I am waiting for it to set overnight into a terrine. Of course if it turns out bad I will have wasted the whole prep day.

I wanted to try this one and devote a day to it provided it's a worthwhile endeavour. Marchigiano ragu.

Practically all recipes I searched on the Internet in English and Italian use store bought ground beef, ground pork, ground chicken or sometimes chicken giblets or chicken liver, and a tiny minority add the sausage, beef bones or beef marrow. Some add herbs (sage, rosemary, parsley, marjoram or some combination). Max Mariola and the Accademia Italiana della Cucina don't add any. Mariola uses (translating Italian cuts to English cuts), top round roast beef, beef shank/osso bucco with the bone marrow, pork loin, pork ribs, flank steak and lets the soffrito and hand crushed tomatoes gently cook it for 8 hours. Most other recipes call for 3-4 hours total (probably because it's already ground).

I can find lots of egg pasta from Campofilone where I live, but not maccheroncini.

I don't misbehave. I'm the nicest person in the world. I don't know why people would any different. Jesus will come down and tap me on one shoulder and vouch how nice I am. Then after that Buddha will show up and nod in agreement. How is it possible I could be less than that?

I'm cooking for a lady friend on Friday. My old boss was offering last weekend to open a few vintage bottles of wine if I cook at his place for his wife and his 3 kids. His wife's eyes widened 100%.
